One of the studios I teach at is Wild Wolf's in Bristol. I'm teaching my Monday Yin & Nidra Class online and then ALSOOO joining the online baking club making delicious snacks each Wednesday. Here is one of the LUSHUS recipes we made the other week, I adapted it to include fresh chives from my allotment & marmite as it adds to the cheese vibe. They are vegan, gluten, and nut free.
VEGAN CHEESE AND CHIVE SCONES
Ingredients:
1 cup rice flour
1 cup GF flour
1/2 cup coconut oil
2 tbsp nutritional yeast
3/4 tsp baking powder
3tbsp fresh chopped chives
1/2 cup & 2 tbsps milk
1tsp tumreric (containing curcumin an anti-inflammatory)
1/2 tsp black pepper (activates curcumin)
1/2 tsp salt
1 tsp marmite (opt)
Method:
Preheat oven 180 degrees celsius.
Add flour, salt, baking powder, black pepper, marmite, turmeric and nutritional yeast to mixing bowl
Add solidified (cold) coconut oil and combine with your fingers gradually until you have a crumbly mixture
Add milk gradually until combined
Fold in chives
Flour your counter top and place dough mixture on counter top. Sprinkle a little flour over the top and shape into a scones
Using a pastry brush, paint over the top of the scones with almond milk
Bake for 15-20 minutes or until golden
Leave to cool and then remove from tray
VOILA- tasty alone, with vegan butter/coconut oil, or with a homemade mushroom paté (recipe to come)
